Broccoli Soup

I initially created this recipe for my sister's boyfriend. I had my sister and her boyfriend over for dinner this past weekend, she had already given me the "run down" on him because the dude is a really, really, really picky eater. My original menu plan was Diva's Baked Ziti, Caesar Salad and Diva's Lemon Meringue Crunch pie. Well the menu had to be altered slightly because her dude does not eat salad because he does not like salad dressing. So I decided to get a vegetable in another way. I designed this soup only to find out the night of the dinner that he doesn't eat broccoli either, who doesn't eat broccoli? I love him anyway and my sister and I enjoyed the soup. Well, here's the recipe:

2 Tbsp. of Olive oil
1 Medium onion, chopped
3 Cloves of garlic, chopped
3 Stalks of celery, chopped
Salt and freshly ground pepper
2 lbs. of fresh broccoli, cut into florets
4 cups of vegetable stock
4 oz. of sharp cheddar cheese, shredded
2 oz. of heavy cream


In a large deep pot heat your olive oil once the oil in hot add your onion, garlic and celery. Add a dash of salt and pepper, saute ingredients until the onion becomes translucent. Add the broccoli and toss ingredients together. Add the Stock to the broccoli and cook until the broccoli becomes tender, approximately 10 minutes. Once the broccoli is tender remove the mixture from the heat and blend until smooth. Return the blended mixture to the pot over medium heat add the heavy cream and the sharp cheddar cheese, stir until the cheese is melted and the soup is smooth. Add salt and pepper to taste. Enjoy!

I also had the opportunity to partake in the very flavorful Broccoli Soup. It was so yummy. Not at all what I was expecting. Sometimes broccoli soup can be to watery or to chunky. This was the perfect mix of finely minced broccoli in a hearty, cheesy broth. It was the kind of soup that would warm up your insides on a cold day but it tasted so good that you would want to eat it year round.

I also liked that it was seasoned well. I am from the South and I like my food to be flavorful. By no means was this the typical bland soup. The only thing I can think of that would have made the soup any better would be to throw in a few large pieces of broccoli florets in addition to the chopped broccoli just for a visual appeal and it would add an extra flare. Kinda like when you think of meatballs in spaghetti. You don’t eat it in every bite of the spaghetti but when you get to it, it is a pleasant surprise. Also I think it would have been even better if it was more cheesy. Overall the soup gets a very high grade from me. I would give it a B+ and I can’t look forward to next time you need me as a taste tester. ;-)

By the way…who doesn’t like broccoli? LOL @ your sis’s man.

I also like a high cheese factor trust me, but I know I can go overboard with it, so I wasn't heavy-handed with it. But when I tasted I would have to agree more creamyness couldn't hurt.

Oh, please don't worry you are definately in DIVA's permanent rolodex. You tasted, commented promptly and enjoyed my food. Gurl please you will stay in the tasters rotation :-)

The tecture and flavor of this soup is a wonderful thing. Being the broccoli and cheese soup connoisseur, I loved it. Big pieces of the broccoli would have been a nice addition yet didn't really need it. ooh, and maybe a layer of the cheese on top, sort of like a french onion style.

The only problem now is that I am at the bottom of the taste testers list again!!!!!

Can you fix the end of my above comment so that people don't think I am crazy? I said " I can’t look forward to next time you need me as a taste tester." Your darn food was so good you made me forget the basic english language. You know I was trying to say that I can't wait until the next time you need me as a taste tester. I think my mind was looking forward to it as I was typing and I got all confused. LOL.

LOL!!! Who knows you maybe be picked for your expertise. For example I may try my hand at a tofu lasagna and whose the expert on that? Hmmmmm.

But don't worry the list is not TOO long, you'll be back at the top before you know it.

Bill's Tofu Lasagna is banging. Diva you might have to give that recipe a whirl. I would always be available to taste that one.

Actually, no, he doesn't eat Lemon Meringue Pie either. Who knew! But I'm prepared for the next time I know that he loves brownies.
